Maybe there’s a fine line between laziness and the brilliant mastery of shortcuts…
- You know, waiting a few days to wash and blowdry ones hair, shaving at least a good 20 minutes off the day.
- Reheating yesterday’s pot of coffee TODAY and stirring a little extra half and half in it to mask how day old it is.
- Wearing (clean) workout clothes to bed the night before a 6:45am bootcamp, clearly saving precious minutes in the wee hours of the morning.
- Foil is totally a substitute for sandwich bags, right?
Laziness or brilliance? Leaving the skin on the squash and roasting it with coconut oil, sage and sea salt. I say brilliance, and I think you might agree after one bite.
Actually the outer skin is very nutritious so if you want a quick shortcut that’s good for you too, try leaving the skin on. It saves time too! Just don’t forget to wash the squash really well, especially if it’s not organic.
Fall wouldn't be fall without butternut squash! This recipe is heavenly, simple and nutritious! Fair warning - this squash is addicting! A great weeknight fall side or beautiful on your Thanksgiving table.
Ingredients
- 1 butternut squash, cut into small pieces (about 4-5 cups)
- 2 tablespoons coconut oil
- 18 small sage leaves
- sea salt
Instructions
- Preheat oven to 425.
- Gently melt coconut oil.
- Spread out squash pieces in a roasting pan, then drizzle melted coconut oil on top and shake gently. Generously salt and place in preheated oven.
- Shake the pan every 5 minutes while cooking until squash is nearly cooked through and begins to caramelize (this took me about 25-30 minutes). Add sage and toss so that the leaves are coated in oil.
- Return pan back to the oven and roast several more minutes until sage is crispy but not burnt. Taste and salt if needed.
