As a kid each Christmas season I looked forward to a baking marathon with my dad. We’d select 5-7 different favorite holiday recipes, head to Costco for way too much butter and chocolate, and get to work. There were always russian teacakes rolled in dusty powdered sugar, peppermint bark topped with crunchy candy cane pieces, these cowboy bars with spanish peanuts that reminded my dad of his Texas childhood…and the quintessential holiday sweet: english toffee.
There are exactly 42 million toffee recipes out there. Some have saltines, some have nuts, I even saw a recipe including pretzels (GENIUS!).
But I’m a purist.
So here’s what’s in this toffee.
Butter
Sugar
Dark chocolate
Sea salt
That’s it. Can you even handle it?
This toffee follows me everywhere I go during the Christmas season since it's so easy and always a crowdpleaser! Makes a great hostess gift too.
Ingredients
- 1 cup (2 sticks) butter
- 2 cups sugar
- 1 cup dark chocolate chips (or semisweet if you must)
- 1 teaspoon coarse sea salt
Instructions
- Over a saucepan, combine butter and sugar and bring to a boil. Over medium-high heat, keep stirring until it turns a deep amber color (about 8-10 minutes). Mine looked like the butter was separating from the sugar and I freaked out a bit but all was well, in case that happens to you too.
- Remove from heat and pour into a rimmed baking sheet lined with parchment paper. Refrigerate 30 minutes or more, or until cool and solid.
- Melt chocolate chips in a glass bowl over a pot of gently boiling water. When chocolate is smooth, pour it over toffee and spread with a spatula. Sprinkle sea salt, then refrigerate until cool and solid.
- Break into pieces.
