(gasp!) eggless cobb salad.
Don’t hate.
Some of us happen to abhor the smell, taste and texture of hard-boiled eggs.
Some of us only have turkey bacon around the house because it’s all our 2 year old boy will eat on most days…and also because buying two varieties of bacon is what rich people do.
Some of us only found yellow grape tomatoes at the store, which is cool anyway since we’ve told the stinky eggs to get lost and our salad now seriously needs a splash of yellow.
Some of us have extra pre-roasted boneless skinless chicken on hand for just this sort of recipe, (especially after stocking up for $1.99/lb!) and pre-cooking the chicken to be used in this salad or these enchiladas.
So here goes nothin’…
A twist on the classic cobb! A little lighter with turkey bacon, and without the egg. But the flavor is still fabulous!
Ingredients
- 4 slices turkey bacon
- 3 tablespoons red-wine vinegar
- 2 tablespoons olive oil
- 1 teaspoon Dijon mustard
- Coarse salt and freshly ground pepper
- 1 large head romaine lettuce, shredded
- 8 ounces (2 cups) roasted chicken or turkey breast, diced
- 1 ripe avocado, pitted, peeled, and thinly sliced
- 3 ounces (3/4 cup) gorgozola cheese, crumbled
- 1 pint grape tomatoes, sliced in half (I used yellow)
Instructions
- In a medium skillet, cook bacon over medium heat until crisp, 3 to 5 minutes. Transfer to a paper towel-lined plate to drain. Let cool, then cut into 1/2-inch pieces, and set aside.
- In a large bowl, whisk together vinegar, mustard, salt, and pepper. While continuing to whisk, drizzle in olive oil until thickened. Add lettuce, and toss to coat. Place on a large serving platter. Arrange remaining ingredients on lettuce as desired, and season with salt and pepper. Serve immediately.
