So my son’s in this…well…I’ll say physical stage.
He’s 2 1/2. Lord help me.
Before I had kids I wondered why those clearly-out-of-control mothers were chasing their wayward kids around the playground…for the love can’t they get some control over their children? And now I am that mother…racing from one end of the park to the other as I see my precious son get ready to clock some poor child in the head.
Lord help me.
No, really. I am so in need of supernatural help.
The thing about disciplining a 2 year old is that it’s so necessary but no one’s too excited about it. He’s not so pumped on the idea (obviously) and neither am I, especially as lately nothing seems to be sinking in…but at the end of the day I know that he’ll be a better man for it (well, that is assuming I find a way to speak to his little person).
So if you have any advice on raising a spirited 2 year old boy, I’m all ears!
And now for the kale…something that in an of itself is a little like discipline – it ain’t so good all by itself but you go for it because it’s healthy and you’ll feel better for eating it.
But topped with dried cherries, roasted cashews and goat cheese…well now you’re talking. Bring on the kale!
I love that kale has become so popular! It doesn't hurt to toss in some nuts, fruit and cheese :) I'm addicted!
Ingredients
- 1 head (about 8 cups) kale
- 1/2 cup dried cherries
- 1/3 cup roasted and salted cashews, coarsely chopped
- 3 ounces goat cheese, crumbled
- 3 tablespoons olive oil
- 1 1/2 tablespoons apple cider or red wine vinegar
- 1 tablespoon dijon mustard
- 2 teaspoons honey
- salt and pepper, to taste
Instructions
- Wash kale and dry leaves with a paper towel. Tear kale into small pieces, removing the rib and discarding completely. Place kale in a large salad bowl. Add dried cherries, cashews and goat cheese. Sprinkle with salt and pepper.
- To make the dressing, in a small bowl whisk together olive oil, vinegar, mustard, and honey. Whisk until smooth and the oil is well incorporated into the mixture. Pour dressing over the salad and toss to combine. I let the salad rest for 20-30 minutes before serving, but you can also serve immediately.

I am definately going to try this one. We juice Kale every day but I may actually get the kids to EAT this one. I never thought about adding Goat Cheese. I’m sure it will be a hit! THX!!!
