I grew zucchini in my teeny-tiny garden just once, and just as I had heard that little plant quickly took over my entire backyard and grew big, fat zucchinis I was certain I could enter into a contest somewhere and win some grand prize.
Sound familiar?
I’ve heard from some of you that you hardly know what to do with all your zucchinis, tossing them on the grill or in stir frys, baking fresh zucchini bread, giving them to friends, neighbors, and complete strangers…
Here’s a new take on zucchini, sauteed with a sweet and tangy vinaigrette that you can dress your salad with too.
Saute up your zucchini in half the vinaigrette and then top with a little extra once the zucchini is fully cooked.

I served it tonight alongside this chicken – a whole meal for about $2.50 per serving!
Sauteed Zucchini with Honey Basil Vinaigrette
(serves 4)
What You’ll Need:
2 tablespoons chopped fresh basil
1 1/2 tablespoons balsamic vinegar
1 1/2 teaspoons dijon mustard
1/2 teaspoon honey
1 clove garlic, minced
3 tablespoons olive oil
4 zucchini, cut into 1/2 inch rounds
salt and pepper
minced fresh basil
Instructions
Whisk together basil, vinegar, mustard, honey, garlic and olive oil in a small bowl (I like to shake up vinaigrettes in a mason jar) until thoroughly combined.
In a medium skillet set over medium-high heat, pour half the vinaigrette. Add zucchini and saute until zucchini is soft, about 5-7 minutes. Toss with remaining vinaigrette and season with salt and pepper. Garnish with fresh basil.
TOTAL: $1.92 or $.48 per serving.

It was so fun to be your assistant as a food stylist on this shoot.
