Oh goodness. Where do I start?
In this scrumptious season you can find yams (and sweet potatoes too for that matter…which are really two different vegetables) for like pennies…okay like 99 pennies a pound. So I figured I would pick up a couple and see what culinary vision might come to us.
Emma suggested we make fries with the yams. So we went for it.
Yes, I allow my 3 year old to peel things…carrots, potatoes, yams, parsnips…pretty much whatever I’ll let her peel, she’ll peel. Don’t judge me. And if it’s any consolation, that’s a poison control center sticker on the cabinet door behind her….a number I may or may not have called when Emma devoured some Desitin a couple years ago.
I’m a good mother…seriously.
Here’s how she did with the whole peeling endeavor. Not bad.
Once the yams are sliced, toss ‘em in oil, sugar, sugar and paprika. Them let them do their thing in the oven to bake up nice and crispy.
And there they are…looking all yammy and yummy and stuff.
Baked Yam Fries
(serves 4-6)
What You’ll Need:
2 yams, peeled and sliced
2 tablespoons olive oil
2 teaspoons salt
1 tablespoon sugar
1 tablespoon paprika
Instructions
Preheat oven to 500°F. Peel the yams and cut in half lengthwise. Cut in half again lengthwise, and then cut into strips. Place yams in a large bowl and add oil, salt, sugar and paprika. Mix so that all pieces are coated in oil and spices.
Spread the yams in a single layer on a baking sheet (if you like extra crispy fries preheat the baking sheet before baking the fries). Bake for 30 minutes in the middle or lower racks, turning all the pieces over halfway through cooking, until all pieces are golden brown. Serve immediately.
