Ok, hold up.
It’s a New Year and you know what that means: all refined sugar, flour, bread, pasta, and processed foods have disappeared.
Well, at least at our house. Yep…I’ve tossed all that, instead opting for more fruits and veggies, beans, whole grains, nuts and seeds. Also, more organics (and more on that shortly), less meat and more whole foods that are nourishing and complete.
So, here are 5 squeaky clean vegetarian dishes we’ll be enjoying at our house. I thought you just might enjoy them too.
Quinoa Salad with Mango and Avocado
Did you know quinoa is a complete protein and has 9 amino acids?
9. Not 8. 9. That’s really something
Roasted Carrot and Avocado Salad
Avocados are a source of healthy fat, and also contain Vitamins A, E, K, B6 and Potassium.
Kale Salad with Dried Cherries, Cashews and Goat Cheese
Kale is low in calories, high in fiber and iron, and has zero fat. So toss on a little crumbled goat cheese, why dontcha?
This salad is loaded with quinoa and many more chopped veggies. It’s a new favorite.
Ok, it’s not technically a salad but this dish is an easy weeknight recipe that’s fantastic and healthy.
