Pears were on sale this week for $.99/lb. Hooray for fall!
Besides tossing ripe pears on this bacon and gorgonzola pizza, I love slicing them up thin and pairing them with goat cheese in an arugula salad. Also there’s the afternoon pear-asiago snack that Luke and I enjoy together most afternoons. Ok my love of pears and cheese runs deep.
This time I sauteed pears in maple syrup and paired them with a rosemary almond shortbread crust for a gluten-free, refined sugar-free treat!
I am dead serious when I say this is just fantastic. Light and tasty. Ah-mazing.
Ingredients
- Rosemary Almond Shortbread Crust
- 5 tablespoons unsalted butter, melted and cooled
- 1/3 cup maple syrup or honey
- 1.5 cups almond meal
- 2 teaspoons fresh rosemary leaves, chopped
- 1/8 teaspoon sea salt
- 1 small sprig of rosemary for garnish
- Sauteed Pears
- 3 ripe, but firm, pears (2 cups), peeled, quartered, and chopped
- 1 tablespoon lemon juice
- 1/2 cup maple syrup or honey
Instructions
- Rosemary Almond Crust
- Preheat oven to 350 degrees.
- Mix all ingredients, except for the 4 extra sprigs of rosemary. Using your fingertips, press dough into the bottoms and partly up the sides of an 8 or 9-inch springform pan.
- Poke the surface of the dough with a fork. Bake 10 minutes, then poke the surface again with a fork to keep the dough from bubbling up too much. Return the tart to the oven and bake another 10 minutes until deep golden brown. Let cool. Serve at room temp, topped with pears.
- Sauteed Pears
- Combine the pear ingredients in a small sauce pan over medium heat. Bring to a boil. Cook for 10 minutes, stirring regularly to avoid burning. Let cool. Just before serving, scoop pears onto the crust. Top with a sprig of rosemary.
