Admittedly I don’t cook French food very often…it feels a bit fussy and too fancy for my get-dinner-on-the-table-in-30-minutes lifestyle these days, plus I assume that there will be all sorts of expensive ingredients to buy that aren’t already sitting in my pantry. But this dish is different – it’s sauteed chicken topped with an easy, creamy mustard sauce that may have caused me to lick my plate clean. And about $1 per serving!
Forget what you knew about French food – you can do this!!
So after sauteeing the chicken, simmer some white wine, half and half, dijon and herbs until you have a divinely thick sauce.
Then pour on top of the chicken and dinner is served! The sauce is also incredible over roasted fingerling potatoes too. Enjoy!
This chicken resembles one you might find at a french bistro! Pour any extra sauce over roasted potatoes or veggies - bon appetite!
Ingredients
- 1 1/2 pounds boneless, skinless chicken breast
- salt and pepper
- 2 tablespoons olive oil
- 1/4 cup dry white wine or chicken broth
- 1/2 cup half and half or cream
- 1 tablespoons dijon mustard
- 1 teaspoon dried oregano, sage or tarragon (or 1 tablespoon chopped fresh)
Instructions
- Sprinkle chicken breasts with salt and pepper.
- In a large skillet, heat oil over medium-high heat. Add chicken and saute until cooked through, 10 to 12 minutes, turning once. Transfer to a plate to keep warm.
- Pour wine or broth into skillet; cook, stirring, until reduced by half, about 1 minute. Whisk in half and half, mustard, and herbs. Cook, whisking, until thickened, about 2 minutes.
- Pour any accumulated chicken juices from plate into sauce. Right before serving, drizzle cream sauce over chicken.
