Yesterday I celebrated my anniversary the way most nuclear families living in Orange County, CA in 2013 might spend it:  I saw my husband of now 9 years for about 45 minutes, with a solid 6 of those minutes eating dinner together. 

Now let me paint you a picture of this fancy anniversary dinner:  both of us scrounging around for food (there is none to be found in this house as, alas, I haven’t been grocery shopping in over a week as it is indeed the end of our monthly budget cycle), with me ultimately settling on cold chicken sausage and a bowl of granola while Andrew opted for said chicken sausage heated up with some black beans he found hiding in the back of the fridge.  #lame

So I made up for all that no-food nonsense with a very meaningful Facebook status update wishing him a happy anniversary.  #superlame

In other news, I present you with possibly the very best dessert I’ve eaten lately.  And the best part:  just 4 ingredients! Can you even handle it??

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 6 servings

There are no words. This recipe is simply wonderful. Very elegant. Very easy. A definite crowd pleaser. I like to serve in little ramikins or martini glasses.

Ingredients

  • 2 cups (1 pint) chilled heavy cream, divided
  • 1 1/2 cups (12 ounces) dark chocolate chips
  • 1/4 cup honey
  • 1 heaping teaspoon sea salt, plus extra for sprinkling

Instructions

  1. Whisk together 3/4 cup cream, chocolate, honey and sea salt in saucepan over low heat until smooth. Cool for a few minutes, stirring occasionally.
  2. In a separate bowl, beat 3/4 cup cream to soft peaks. Fold cream into chocolate in 2 additions.
  3. Divide mousse among 6 glasses or ramekins. Refrigerate until set, about 2 hours.
  4. Whisk remaining 1/2 cup cream to firm peaks. Spoon a little cream on top of each mousse. Top with a sprinkle of sea salt.
  5. Enjoy with berries if you wish. Try to resist the urge to lick the bowl clean.
