Things that are humbling:

1.  Well-meaning, quite public and totally ineffective attempts to discipline a 2 year old boy.

2.  Slipping and becoming submerged in a kids pool (fully clothed) while said ineffective and public discipline is taking place when aforementioned sweet boy doesn’t want to leave…and fishing him out becomes necessary.

3.  5 year olds who offer parenting counsel to mortified Mama in an effort to help me Mama see better results next time.

5.  years.  old.

Lord help me.  And thanks for the dose of humility.

And now let’s talk frittatas.

As you know the subject of breakfast for dinner is often explored around here as we find it an easy, tasty and inexpensive to eat well.  And 9 times out of 10 we all enjoy it – adults and kids alike!

So here’s an apple and white cheddar frittata that the kiddos will enjoy…I went straight up plain with this one but you could toss in some fresh herbs or caramelized onions while baking too.

I love those meals where you typically always have ingredients on hand and this one is no exception!  We’re talking eggs, cheese, apples, and butter.  Easy!

Serve with a simple side salad and bacon or fruit and dinner (or breakfast, brunch, lunch) is served!

Cook Time: 25 minutes

Total Time: 35 minutes

Breakfast, lunch or dinner...here's a kid-friendly meal perfect for any time of day!

Ingredients

  • 8 large eggs plus 2 large egg whites
  • 4 ounces white cheddar cheese, coarsely grated (1 cup)
  • Coarse salt and ground pepper
  • 1 tablespoon butter
  • 2 Gala apples, peeled, cored, and sliced lengthwise into 1/8-inch-thick pieces

Instructions

  1. Preheat oven to 450 degrees.
  2. In a medium bowl, whisk together eggs, egg whites, and half the cheese; season with salt and pepper.
  3. In a medium cast-iron or nonstick ovenproof skillet, heat butter over medium.
  4. Add egg mixture; while it cooks, 1 to 2 minutes until edge is set, arrange apples on top in a circular pattern, starting from the outside edge, and sprinkle with remaining cheese.
  5. Transfer skillet to oven. Bake until frittata is set in the center and cheese is browned, about 20 minutes.
  6. Using a rubber spatula, release frittata onto a cutting board; let rest 5 minutes. Cut into wedges, and serve.
