roasted apricots with goat cheese.

It was 5pm last Thursday when it occurred to me I hadn’t planned my “easy summer dish” for my 8pm book club.  Each of the 12 of us were to bring a go-to dish that was simple and summery.  I took a look at what I had on hand around the kitchen (which wasn’t much):

And thus this recipe was invented, on the fly, partly out of desperation and absolutely from my poor lack of planning.  And as we sat around the table that evening discussing how somehow our book club has managed to meet every Thursday night for 5 years, we enjoyed these apricots as well as Elizabeth’s israeli cous cous salad, Ana’s homemade chips, salsa and guac, Kelly’s watermelon/goat cheese salad, Sarah’s Lillet, Jonne’s to-die-for berry crisp, and so many more new summer favorites.

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Yield: 20 apricot halves

Serving Size: 1 apricot

Calories per serving: 40

Fat per serving: 2

A wonderful summer appetizer! Simple, elegant and a crowd-pleaser!

Ingredients

  • 10 apricots, halved
  • 1/2-2/3 cup goat cheese crumbles
  • honey
  • chopped basil

Instructions

  1. Pre-heat oven to broil.
  2. Place apricot halves on a rimmed baking sheet.
  3. Stuff with a little goat cheese.
  4. Broil for 3-5 minutes, or until apricot is soft and cheese has melted.
  5. Remove from oven, top with basil and drizzle with honey.

40 calories per serving, 2 grams of fat, 6 carbs, 1 gram protein
