Step 1: To make a rustic and nutritious tomato basil soup, start by roasting or grilling these babies.
If you can score them for $.99/lb, as I did this week at Sprouts, you get a big gold star.
I’ll also throw in a virtual high five.
Step 2: Grab a handful of this.
Maybe from your herb garden.
Maybe not.
Step 3: Puree them together for a little of this.
Oh yeah.
Maybe with a grilled cheese.
Possibly one with brie.
Brie and fig jam.
Yes please.
Grilled Tomato Basil Soup
(Serves 4)
What You’ll Need:
3 pounds tomatoes, halved and seeded
olive oil for drizzling
2 tablespoons olive oil
1 medium onion, chopped
3 garlic cloves, minced
3 cups chicken stock
1/2 cup basil, chopped
salt and pepper
garnish – basil leaves, goat cheese, feta or sour cream
Instructions
Preheat oven to broil.
Place tomatoes skin-side up on a baking sheet with sides. Brush with olive oil.
Broil tomatoes 8-10 minutes until lightly charred, then turn over and broil another 8-10 minutes until tomatoes become pale in color. Let sit on baking sheet to cool slightly.
In a large saucepan set over medium heat, saute onions in oil for 5-7 minutes until golden, stirring occasionally. Add garlic and cook for 1 minute until garlic is soft and fragrant. Add tomatoes, stock and basil and simmer, covered, for 30 minutes.
Place soup in a food processor or blender (you will want to work in 2-3 batches). Once pureed, place back over heat and season with salt and pepper.
Serve hot or cold, topping with basil leaves, goat or feta cheeses or sour cream.
