strawberry spinach salad with macadamia nuts.

It’s July.

I’d like to be lying on the beach in Hawaii.  But I’m not.  I’m chasing a one year old around the pool, hoping other parents don’t judge me for letting him eat food off the ground to keep him occupied and sitting in one place for 3 minutes.

So instead we’ll bring Hawaii to us and enjoy this tropical salad with macadamia goodness.

This salad is pretty straightforward and quite delicious…and the addition of macadamia nuts make it feel like a splurge.  So toss this one up the next time you have company – they’ll be so impressed!

I could probably eat an entire can of macadamia nuts.  Oh goodness.  They’re low-carb, right?

Strawberry Spinach Salad with Macadamia Nuts

(serves 4)

What You’ll Need:

1 tablespoon raspberry or red wine vinegar

1 tablespoon raspberry or strawberry jam

2 tablespoons canola oil

4 cups spinach, torn into pieces

1/2 cup macadamia nuts, coarsely chopped*

*I picked up just the amount I needed at the bulk section of Sprouts (saving some dough)

1/2 cup fresh sliced strawberries

1 kiwi, peeled and sliced

Instructions

Prepare the dressing by combining vinegar and jam in a blender.  Add oil in a thin stream, blending well.

Toss spinach, 1/2 of nuts, 1/2 strawberries and 1/2 of the kiwis with the dressing on a platter.  Top with remaining nuts, strawberries, and kiwis.  Serve immediately.

TOTAL:  $4.90 or $1.22 per serving.  Or if you go with walnuts or pecans you can cut down on the cost.
