Last week we enjoyed this peach galette with french vanilla ice cream and a bottle of chardonnay outside under the stars.
I love summer.
I used peaches that I found for $.88/lb, but you could substitute any kind of fruit – apples would be great, berries, pears, apricots, plums, cherries.
And top it with some form of cream.
Heaven.
Peach Galette
(Serves 6)
What You’ll Need:
1 sheet puff pastry
5 peaches, sliced
2 tablespoons brown sugar
1 teaspoon cinnamon
1 tablespoon lemon juice
1 teaspoon vanilla (or brandy, grand marnier, etc)
1 egg
2 tablespoons half and half or cream
turbinado sugar
whipped or ice cream
Instructions:
Preheat oven to 375. Roll out puff pastry to desired thickness.
In a bowl, mix peaches, brown sugar, cinnamon, lemon juice and vanilla. Separately mix egg and half and half or cream in a small bowl. Pour peaches on puff pastry, then roll sides over and brush top with egg/cream mixture. Sprinkle top with turbinado sugar for extra crunch.
Bake on a jelly roll pan (or cookie sheet with sides) for 20-25 minutes or until fruit is bubbling and top of puff pastry is golden brown.
Serve with whipped cream or vanilla ice cream.
TOTAL: $6.50 with ice cream or about $1.08 per serving.

Your galette must have been delicious, the peaches look perfectly ripe. We have an apple orchard and I love to make a small apple galette for two.
