How many times have you been tasked with bringing an appetizer somewhere and have found yourself moments before the event still wondering on what on earth you’ll bring?

This was my night last week when we met up with friends for a picnic in Laguna Beach.  And so in the end I went with bruschetta because it’s simple, delish, and always a crowd pleaser.  And did you know bruschetta doesn’t have to be toasted bread with tomato/basil mixture on top?  That’s right, you can change it up by topping with meats, cheeses, vegetables, beans, or red peppers.

Garlicky Tomato Basil Bruschetta

(approx. 12 pieces)

What You’ll Need:

4 roma tomatoes, seeded and coarsely chopped

3 cloves minced garlic

3 tablespoons basil, chopped

sea salt and pepper

2 tablespoons olive oil

1 tablespoon balsamic vinegar

toasted baguette slices (I brush on both sides with olive oil, sprinkle with salt and broil a minute or two on each side…watch closely)

Instructions

Combine all ingredients in a medium bowl.  Refrigerate 30 minutes so flavors can get to know each other.  Spoon tomato mixture on top of baguette slices and serve.

    My sis in law made this as a prelude to our family dinner on Saturday and added some toasted pine nuts. It was delish! Loved the garlic. So good!
