Do you ever have those moments where life feels so totally out of control that you want to stop everything and bring order and beauty to just one thing within your reach?

That was my night tonight.

And so, in the midst of the chaos, I roasted sirloin steaks for Andrew and I and chopped up a corn salsa.

And it was beautiful.

Nevermind that we had 10 minutes to scarf them down between evening activities, or that the house was a disaster, or that the kids interrupted our conversation 27 times…it was my own way of bringing a little sanity to an otherwise bizarrely crazy day.

All those colors, so summery and pretty.

Pan Roasted Sirloin with Corn Salsa

(serves 4)

What You’ll Need:

Corn Relish

2 tablespoons red wine vinegar ($.10 at $.05/tablespoon)

2 tablespoons sugar ($.05 at $.60/lb)

1/2 red bell pepper, diced ($.50 at $.99 per)

1/4 red onion, diced ($.15 at $.59/lb)

1/4 cup cilantro, chopped ($.13 at $.50/bunch)

1/2 seeded jalapeno, diced ($.20 at $.99/lb)

2 cups corn ($.65 at $1.29/bag)

salt and pepper (trace)

cumin (trace)

Roasted Sirloin

1.5 pounds sirloin steak ($6.00 at $3.99/lb on sale at Sprouts!)

1 tablespoon extra virgin olive oil ($.08 at $.08/tablespoon)

salt and pepper (trace)

1 teaspoon cumin (trace)

Instructions

For Salsa:

Mix all ingredients in a bowl and set aside.  Can be made several hours in advance.

For Sirloin:

Sprinkle cumin, salt and pepper on sirloin.

In a large skillet, heat 1 tablespoon olive oil over medium heat and add steaks, cooking about 4 minutes and then turning over for another 4 minutes for medium rare (cook longer for higher temperature).  Remove steaks from skillet and let rest for a few minutes before plating.

Alternatively, you could grill your steaks too.

Top with corn salsa.

TOTAL:  $7.86 or $1.97 per serving.
